Uses of Benzoic Acid
Benzoic acid is a very common food preservative. In the food industry, its maximum amount should not exceed 2.0 g/kgin concentrated fruit and vegetable juice in plastic buckets, 1.0 g/kg in jams, juice drinks, soy sauce, and vinegar, 0.8 g/kg in the soft candy, grape wine, and other fruit wines, 0.5 g/kg in low-salt pickles, sauces, and preserved fruits, and 0.2 g/kg in sodas.
Benzoic acid has a low solubility and must be fully stirred or dissolved in a small amount of hot water or ethanol. Sodium benzoate is frequently used in refreshing drinks like concentrated juice because benzoic acid easily volatilizes with water vapor.
Benzoic acid is a common preservative in the food industry, but not allowed in dairy products. Benzoic acid is generally considered safe. For some special people including infants and young children, it is used as a flavoring agent for juice drinks and a balm for aromatherapy oils.
